Résumé : | As a general term, the concept of a food system is undergoing a rapid evolution in meaning. Early literature on food systems typically focused on addressing key dimensions of food systems in relation to the need to feed growing populations. The treatment of the subject ranged from production and distribution issues (Collins, 1963) to more consumption and consumer oriented questions in increasingly industrialized economies (Padberg, 1970). In recent years, a more holistic concept of a food system has gained traction amongst both scholars and policy-makers (Ericksen, 2008; Global Panel on Agriculture and Food Systems for Nutrition, 2016) with a perspective that integrates, all the elements (environment, people, inputs, processes, infrastructures, institutions, etc.) and activities that relate to the production, processing, distribution, preparation and consumption of food, and the output of these activities, including socio-economic and environmental outcomes, (HLPE, 2017). |
