Résumé : | In the world, the part of eating proteins from vegetable produce is twice as important than the part from animal produce. This prevailing status can be decreased insofar as animal protein consumption is highly increased in developing countries that represent 4/5th of the global population. Cereals are the main suppliers followed by fresh and dried pulses, oilseeds, tubers and roots. Consumption areas are connected to domestication places, but are also result of important products transfers. However, geographical differentiations are clearly established. A worldwide typology of eating models displays these international differentiations. Some populations extract vegetable proteins almost exclusively from leguminous plants, some others from cereals and some others lastly from tubers and roots. Negative evolution of the vegetable part to protein resources risks to be inverted in connection with new food preoccupations (Résumé de la publication) |
