| Résumé : | Plastic waste and food safety concerns are pushing interest in new types of packaging. This thesis asks what makes French shoppers willing to choose biodegradable, antimicrobial, and smart-label packaging for fish fillets. A 30-question survey was built grounded in the Theory of Planned Behavior, the Environmentally Responsible Behavior model, and the Health Belief Model, and gathered responses from 395 adults in France. Answers were recorded on a five-point Likert scale (Strongly Disagree - Strongly Agree) and a willingness-to-pay options to capture comfort with price premiums. Using R, descriptive analysis, reliability checks, correlation matrix, principal component analysis, and demographic regressions were conducted. The questionnaire was pilot-tested for clarity, participation was anonymous, and procedures followed French legal guidelines. Positioned within NOVISHPAKs work on seaweed-based films, the study is designed to inform practical choices for producers, retailers, and policymakers who must balance safety, sustainability, and affordability. It also offers a reusable survey and transparent R workflow for cross-country comparisons and future seafood categories keeping the focus on packaging that feels safe, easy to understand, and better for the ocean. Results show that consumers are broadly positive; health/environment concerns and trust in freshness indicators drive acceptance, while price sensitivity limits willingness to pay. Women and higher-educated respondents are more favorable; older groups are more cautious. |
