| Résumé : | Cities want to better understand how their food reaches people, which means looking not only at the flow of products but also at the relationships between suppliers and customers. However, practical ways to study these dynamics are still limited. This research, conducted as part of the TERRASOL project, focuses on the meat sector in Montpellier to explore how these relationships and flows shape the role of the Marché dIntérêt National (MIN) in the citys food system. Based on semi-directed interviews with key actors, we mapped how meat moves through the MIN, exploring the origins and destinations of products, seasonal adaptations, and challenges such as logistics and traceability. We also examined how the MIN contributes to making supply chains more resilient, efficient, and sustainable. Overall, this study provides a practical approach for cities to better understand and manage their food supply. |
